These cookies were an experiment based on what I had in the pantry and oh, man…did they turn out good!!
All the flavors of a classic bananas foster dessert without that scary “flambe” moment where you might burn the eyebrows off your face. In the immortal words of Martha Stewart…it’s a good thing.

That’s a mouthful isn’t it? White chocolate macadamia and coconut cookies.
Personally, I prefer to call these “Deserted Island” cookies – because if I was stranded on a deserted island and had coconut and macadamia nuts coming out of my ears (and also happened to have a lifetime supply of white chocolate on my hands) – these are the cookies I would make. I’d probably have to reach back into the deep part of the brain where I’ve stored my girl scout memories to figure out how to bake them over a campfire or some sort of cardboard stove…but I would find a way to make them!

I hope the holiday season is treating everyone well! I made these white turtle cookies for the Thanksgiving potluck we had at work a few weeks ago. Um, yeah. I know, it’s been a few weeks and I’ve been a real slacker with the posts lately. Other than this batch, I haven’t been doing a lot of baking lately. We had a really small Thanksgiving this year - so no need to go crazy with the cooking. I was also training for and finished my second half marathon on Thanksgiving morning (woohoo!!). Combine that with work, a toddler, and life in general and my mixer has been on a short hiatus.

Monster Mash cookies with AND without the candy corn topper.
I’ve had this recipe idea in my head for the past year! Last fall, I picked up a container of trail mix from my local Fresh Market that included salted peanuts, golden raisins, and candy corn. There may or may not have been white chocolate or peanut butter chips in it – that part, I’m fuzzy on. However, my memory is 100% clear that this was one heck of a delicious salty/sweet combination!

I was nine years old when E.T. made its way to the movie screen in 1982. As a kid, it was the first movie that I remember being completely emotionally wrapped up in the story – probably because I was about the same age as the main character, Elliott. That summer, E.T. was literally EVERYWHERE…fast food cups, dolls, toys, clothing – even underwear (don’t get me started on that one). My brother and I both dressed up as E.T. for Halloween that year in hand-sewn costumes my mom made for us…they were fabulous, but I’m pretty sure mom came close to having a nervous breakdown putting the darn things together. It’s the dog days of summer (not sure what that actually means). Whatever, it’s stinkin’ hot out there. I’d wager that wherever you live in America, most folks are ready for summer 2012 to wrap on up and move along. It’ll be quite some time before we see significantly cooler weather here in the South, but I’m hoping for a few breaks here and there signaling that fall (and football!) is on its way. A girl can dream, right?!
Until then, here’s a recipe for a summer-y cookie that has a nice light flavor…and in my opinion, looks kinda pretty to boot.

While at the grocery store, I threw my usual container of almonds into the cart (one of my go-to snacks!) but also noticed a small jar of shelled sunflower seeds on the shelf above. I hadn’t had any of those in ages and I thought they might make for a nice topping on salads…so, they got thrown in the cart, too.
What is it they say about good intentions? Or the best-laid plans? Well, rather than putting those healthy little sunflower seeds on top of a salad, I got home and decided that their fate might be more fun (and tasty!) if they were baked into a cookie. I know, I know. Shocking, right? Ummmmmm, yeah. Not so much.

Clearly I’m on some sort of kick with my mini muffin tin. My last post featured these little chocolate salted caramel cookies. As I was making those, I was inspired to use the technique with some other flavor combinations.

Today’s recipe is a tiny twist on the classic chocolate chip cookie…using instant cheesecake pudding mix and big ol’ Toll House chocolate chunks!
The cheesecake flavor is not overpowering at all – it just adds a little bit of “tang” (is that a real adjective? Or just an odd powdered orange beverage from my childhood?). I digress.
