The last week has been a blur of mixing and baking. I made one of my tried and true holiday recipes (Pistachio Chocolate Chunk Cookies) and tested nine new recipes. Out of the bunch, I only had one fail that I think still needs some tinkering. Not too shabby!

These white chocolate cherry cheesecake cookies were one of my latest experiments that turned out absolutely AMAZING! They were declared a new favorite by my husband…a man who has particular tastes when it comes to baked good/sweets since he’s more of a meat and potatoes kind of guy.

Monster Mash cookies with AND without the candy corn topper.

I’ve had this recipe idea in my head for the past year! Last fall, I picked up a container of trail mix from my local Fresh Market that included salted peanuts, golden raisins, and candy corn. There may or may not have been white chocolate or peanut butter chips in it – that part, I’m fuzzy on. However, my memory is 100% clear that this was one heck of a delicious salty/sweet combination!

So, I’m preeeeeetttty sure that snack cake isn’t exactly what Steve Miller was singing about in those lyrics. What I do know for sure is that peaches (especially here in the peach state!) are at their prime right now…and your taste buds WILL have a good time when you bake up this yummy cake!

It’s the dog days of summer (not sure what that actually means). Whatever, it’s stinkin’ hot out there. I’d wager that wherever you live in America, most folks are ready for summer 2012 to wrap on up and move along. It’ll be quite some time before we see significantly cooler weather here in the South, but I’m hoping for a few breaks here and there signaling that fall (and football!) is on its way. A girl can dream, right?!

Until then, here’s a recipe for a summer-y cookie that has a nice light flavor…and in my opinion, looks kinda pretty to boot.

Remember these little guys? When I was a kid, Baskin Robbins sold these sundaes in mini baseball batting helmets with team logos printed on the side…the goal being to collect them all (or maybe just your favorite teams). I always wanted my ice cream in a cone – which as we all know, can be dangerous territory for a kid. One false move, and PLOP. What started as a fun family trip to the scoop shop turns into a level 5 meltdown. Literally.

Happy new year everyone! I realize that’s slightly awkward given the fact that we’re more than halfway through January. But, I figured ya’ll needed a bit of a break from all the cookie madness. Christmas is basically the Superbowl for cookies and like any athlete, I needed a little R&R and time to get re-energized.

I’ve been finding inspiration in many places (dear heavens, I love me some Pinterest!). One of the most intriguing dessert recipes I’ve seen recently is for Banoffee Pie. Have you ever tried it?

I made these a few weeks ago for a gathering with my girlfriends. Now, you may think that making a filled cupcake is complicated or too fancy for you to pull off. I’m here to tell you, it’s actually quite easy – no fancy pants required!

Especially when these cupcakes start with a boxed cake mix. This recipe simply boosts that box mix with some really good vanilla and almond extract…and the raspberry filling of course (which is just store-bought raspberry preserves). Top it with a cream cheese frosting and you’ve got something that looks and tastes fancy (without the added hassle of finding a pair of fancy pants).

My grandma grew up during the Depression era. To this day, I think she still saves margarine containers, bread bags and jelly jars so they can be re-used as storage or for crafts…and you better believe wrapping paper and bows get squirreled away, too. I don’t even think she throws out coffee grounds. Those go in her compost bin for the flower beds. Grandma was green before green was cool!

Nothing goes to waste in the kitchen either. When it comes to scraps of pie dough, she slathers on some melted butter, sprinkles with cinnamon and sugar, rolls up the pieces and bakes them into what she calls “tootsie” rolls. My mom made these when I was a kid…and now I’m going to make them for my family.
