These pudding cookies are inspired by the popular Hello Dolly Bars (or 7-layer bars as many people may know them). I used most of the same ingredients: butterscotch, chocolate, graham crackers, and coconut. The only ”mix-in” type ingredient I left out from the original recipe was almonds (or pecans, depending on which recipe you’re using). Not because I don’t like them…I simply forgot about them! So, if you’ve got some chopped almonds or pecans on hand, throw those into the mix as well.

Remember this post about my grandma’s Special K bars? Growing up, these were pretty much a staple on the Christmas cookie tray. This year, I’ve morphed them from their traditional form into a pudding cookie…not that there’s anything wrong with the original bars. You know me. Pudding cookies are my “thing” and I love the challenge of fitting a beloved treat or dessert into a little cookie. And so, here we are.

I hope the holiday season is treating everyone well! I made these white turtle cookies for the Thanksgiving potluck we had at work a few weeks ago. Um, yeah. I know, it’s been a few weeks and I’ve been a real slacker with the posts lately. Other than this batch, I haven’t been doing a lot of baking lately. We had a really small Thanksgiving this year - so no need to go crazy with the cooking. I was also training for and finished my second half marathon on Thanksgiving morning (woohoo!!). Combine that with work, a toddler, and life in general and my mixer has been on a short hiatus.

Monster Mash cookies with AND without the candy corn topper.

I’ve had this recipe idea in my head for the past year! Last fall, I picked up a container of trail mix from my local Fresh Market that included salted peanuts, golden raisins, and candy corn. There may or may not have been white chocolate or peanut butter chips in it – that part, I’m fuzzy on. However, my memory is 100% clear that this was one heck of a delicious salty/sweet combination!

Well, hello there Rolo Minis - it’s a pleasure to meet you! Oh, what’s that? I don’t have to unwrap each individual candy…yes, please.

Normally, unwrapping a piece of candy isn’t exactly something that breaks a sweat – but unwrapping candy for baking is slightly annoying – despite the delicious pay off. Enter these awesome little bags of candy that seem to be popping up on my store’s shelf. I wonder if these were made with the “baker” in mind or just the folks who like tiny food (and dislike wrappers). Sounds like a marketing question better left for another time.

I know, I know. It’s been a ridiculously long time since my last post. Life has been a bit crazy…but chock full of great stuff like a vacation in Mexico and completing my first half-marathon with Team in Training (TNT)! Can’t complain.

As part of my half-marathon training with TNT, I pledged to raise a minimum of $1,000 for the Leukemia and Lymphoma Society. I raised just over $1,300 thanks to my fabulous family, friends and co-workers. One of my fundraising tactics was to supply one dozen homemade cookies to each donor that gave a $10 minimum. Needless to say, I’ve been a baking machine.

So, the Super Bowl is coming up this Sunday - what are you doing? We’ve got nothing spectacular planned in our house…except, maybe these delicious blondies I concocted last night. I call them Tailgaters because they contain some key players that you find at most tailgate parties: potato chips, pretzels, and candy (in this case, we’ve got chocolate AND caramel in the form of Rolo’s!).

This recipe, my final post before the holiday, is an oldie but goodie. My grandma made these chewy treats when I was growing up. Any time we had the good fortune to spend Christmas with my grandma, I remember a tin of Special K bars.

Tis the season to be thankful…and this year, I’m thankful for all the new and wonderful baking products I’m seeing in the store aisles this year!

You may not be as dorky as me to realize that adding caramel to a cookie recipe can be a pain in the rear. Well, here’s the deal: you have to unwrap each one (which isn’t so bad) but then you have to figure out a way to cut them up into manageable pieces for your recipe. Ugh. There are Rolo candies…but if you don’t want chocolate in your recipe, they don’t help much. You could also buy some soft specialty caramels from a local candy store and cut those up into little pieces…but I’m guessing that might also cost a pretty penny. Well, imagine my excitement when I saw these Kraft caramel bits at my local Walmart!!
